Dark, rainy days have been frequent here in New England, and after 3 days without sunlight, one could say I was in need of some summer. I recently purchased this cookie press, and knew it was finally time to give it a whirl. After spying a flower design, off I was to bake some cookies! The recipe is a simple one, easy enough even for the infrequent baker to follow.

Vanilla Cookies

Ingredients {makes about 4 dozen cookies}:

1 cup {2 sticks} unsalted butter at room temperature

1 cup granulated sugar

1 egg

2 1/2 tsp. vanilla extract

1/2 tsp. salt

2 1/2 cups all purpose flour

Directions:

1. Preheat oven to 375 F

2. Combine the butter and sugar in a large bowl. Use an electric mixer set to medium speed, beating the ingredients until light and fluffy

3. Beat in the egg, vanilla extract, and salt. Then add the flour and mix slowly until well combined.

4. Pack the dough into the cookie press. Press the dough out onto an ungreased cookie sheet, 1 inch apart.

5. Bake for 10 minutes, or until lightly golden. Transfer the cookies onto a separate sheet to cool and sprinkle with sugar and a pinch of salt.

6. Serve and enjoy!

The cookies were as yummy as they were beautiful. They came out tasting buttery, a true “melt in your mouth” dessert. This recipe can be adapted to work for any style cookie press, or even just with a traditional circular cookie {no need to get fancy with the press!}. They are perfect for dunking into milk, plus they serve as a light, low-calorie treat.
